It was a beautiful Sunday before Valentine's Day. Hubby and I were in Singapore for the weekend, and we decided to celebrate Valentine's Day with a romantic, and delicious, brunch at db Bistro Moderne.
After a short MRT ride and walk to the Marina Bay Sands, we walked into the beautiful French-American restaurant, db Bistro Moderne. Comfy settings with an American (looks and sounds New Yorkian) maitre d' to greet you at the reception. Deep brown wood paneling and strong bold lines of the furnishings really give you a French-American contemporary feel. With sunlight streaming through the tall windows looking out into the shopping atrium of the Marina Bay Sands Resort, we were wowed by the decor, ambience and comfort of the bistro.
db Bistro Moderne is one of the restaurants/cafes by Michelin starred Chef Danial Boulud; his first in the Asian region. Renowned for his award winning, 3-Michelin starred restaurant Daniel, in New York, it is really a treat that we can access his culinary offerings so close to home.
Full marks for db Bistro Moderne for decor, ambience, service and pedigree,now to the crux of our excursions: the proof of the pudding is in the eating!

For the both of us, we started out with a Charcuterie Platter (SGD $26), which is a platter of cold cuts, (terrines) meatloaf with pates, pickles and fresh rye bread. It was very interesting as it is not part of our usual diet. We enjoyed the piquant yet buttery taste of the pate together with the cold cuts and pickles on bread. We took our time to savour little bites of each cold meat with pate, pickles on bite sized portions of rye bread. Our only grouse was that the bread was quite cold when it was served. I think it would have tasted even better had the bread been warm.
For our mains, hubby had the Original db Burger (SGD$35) while i chose to Steak Minute (SGD$26) from the Les Ouefs menu (The Eggs).
The Steak Minute comprised of a sunny side up egg, breakfast potato, sauce au poivre (pepper sauce) with steak and mesclun salad. Well, in short, the Steak Minute was to die for! I especially loved the breakfast potatoes. Perfectly fried to be golden brown on each cube, well seasoned as well as soaking up a bit of sauce au poivre and finally sprinkled with some chopped parsley! I am usually not a big fan of potatoes, but db's breakfast potatoes is enough to make a convert of anyone! Til today, i still crave for that delicious breakfast potatoes! I savoured each and every cube.....if i could, i would have named each and every cube of potatoes before i chomped it down! Just to remember them by! The steak itself was overshadowed by my love with the potatoes but i had no complaints with the rest of the dish.
Hubby's Original db Burger was made out of sirloin wrapped around short ribs and with a foie gras center on a parmesan bun with french fries (or Pommes Frites, in French). A combination of succulent sirloin wrapped around juicy and tasty short ribs with the buttery foie gras center explodes in your mouth when you bite into this substantial burger. However, you'll need a detachable jaw if you intend to tackle it whole! In terms of size, it was reasonably large however so compact that it is indeed a substantial meal by itself!
We decided to skip dessert as we wanted to hunt around Marina Bay Sands for other delectable offerings. Our Valentine's Brunch cost us a total of SGD $110 but i felt it was every penny well spent as it is a rare opportunity to try a Michelin Starred chef's offerings.
Seriously, go and try out db Bistro Moderne. Great for some couple time!
